Blacksticks Blue (v) – the daddy of blue cheeses. This farmhouse soft, blue veined cheese is handmade from the rich pasteurised milk of the Butlers family herd of pedigree cows in rural Lancashire. Aged for about 8 weeks it develops a distinctive amber hue and deliciously creamy smooth yet tangy taste. Soft enough to spread on bread or crackers as well as used in cooking.
Vacherin, Mont D’Or – the intense powerful gooey cheese that is only available for a few months of the year. Made when the cows are brought down from their high summertime pastures on the French and Swiss sides of the Jura mountains, it is rich, soft and creamy and very runny when ripe. Scoop onto your plate and enjoy.
Gorwydd Caerphilly – an artisan raw milk, naturally rinded, cloth bound cheese that is made to a traditional recipe working the curds by hand. The cheeses are matured for three to four months to develop a depth of flavour that is still fresh with citrus notes and creamy moist texture. Deservedly has won numerous prestigious awards.
